These past few days have been stressful for me, a lot going on. I can't wait to go to Washington at the end of July! I just want to get out for a while, I have also never been there. I'm really hoping I get to stop in Seattle. The scenery is going to be so beautiful.
Today was a little bit better. Spencer and I went grocery shopping for dinner. We had a lot of Top Ramen and we were sick of having it plain so I looked up some recipes. I made a top ramen broccoli and beef stir fry and had yummy watermelon for dessert. It was perfect because it was so hot today! We stayed in and watched a marathon of Adam Sandler movies. He is the best.
Here's the recipe for the stir fry:
Beef & Broccoli Stir Fry Ramen
1 package beef or spicy beef ramen noodles
2 cups water
1 pound beef steak strips
2 teaspoons oil
2 cups broccoli, cut up
1 cup green onions, cut in strips
1 tablespoon soy sauce
1/8 teaspoon crushed red pepper (optional)
What to do:
Cook noodles according to package directions and drain. In skillet brown beef and drain. Add oil, 1/2 seasoning packet, broccoli and onions. Stir-fry for five minutes. Add soy sauce and red pepper.Simmer for five minutes more. Serve over noodles.

I recommend also adding teriyaki sauce also, it will taste much better!
